Here is a quicky catfish recipe that works for me.The stuff you need is as follows; Fresh ginger in a squeeze tube(great invention by the way),fresh cracked peppercorn medley or black pepper(the medley peppercorns have a little more diverse flavor,and you can get them anywhere),Zatarin's seasoned Fish-Fri(crispy southern style),soy sauce,butter,and olive oil. Take the catfish fillets and season both sides with pepper,lightly dust with the Fish-Fri. The soy will provide the salt later. Saute in a frying pan with a little olive oil on medium heat.While that's going on put equal parts of butter and soy sauce in a bowl,give it a good squirt of the ginger and nuke it.Plate the fish and drizzle it with the sauce. As to bread; I take corn bread,slice it,butter it,lightly dust it with garlic powder and toast it under the broiler.You can get this going before you start anything else. Vegetables? I like to drain a can of kale and throw it in the pan while it's still hot.I never thought that canned kale, or any kale for that matter would be good until my mother served it as a side during a family get together. You have the time to saute fresh asparagus in the pan if you choose.Never been a big fan of canned vegetables,but remember this is a quicky meal.Canned new potatoes,and black olives work good to. Got some prepared rice in the fridge? throw it into the pan and toast it.The soy/butter/ginger sauce will turn bland store bought cooked shrimp into a terrific dish over rice.Got a great quick southwestern bean dish I might post later.
