Re: Winter Squash. The butternut squash is more common in the stores. The acorn squash kind of looks like a giant dark green acorn with some yellow on the bottom. Food Lion in Kill Devil Hills has both squash out in the middle behind the sweet potatoes not in the frig and they usually don't have very many of them. I just leave the skin on the acorn and eat the inside of the squash, they can be a lot of trouble to peel. The acorn has more of a pumpkin taste than the other.
Re: Kale. Take off as much of the leaf stem "straw" as possible. You can cut the seed shoots off early and that will help keep it from getting bitter during the summer. If you plant kale here in the fall and it gets big enough the kale will survive the winter but won't grow during the coldest part then it comes back really nice in the spring. I've had farmers compliment me. I also throw some leaves and pine needles lightly over the kale to keep it from freezing during the winter. I keep it thinned out and mix the kale with regular purple top turnips. I cook the kale and turnip greens together, I don't care much for the turnip at the bottom.
