Big Bluefish Recipe

This is the way I ate a small size big blue back in the 1970s.
There was size classes like drum. I forget what it was now, one was jumbo size.
Back then they would make fun of you for catching a 12 pounder.
The smaller fish were better for eating.

Bisquicked Big Bluefish for 1 - 12 pounder
Cut skin and dark red meat off fillet.
Cut fillet into small 2 inch strips.
Soak in salt water for 2 hours. Change the water every 30 minutes to remove the blood and oil.
Prepare batter dip mix for 1 whole fish.
2 eggs
1/2 cup milk
1/2 tsp. of garlic, basil, oregano
1/4 tsp. of salt, pepperPreheat deep fryer oil to 375 degrees.
Dip small amounts of fish strips in batter mix and shake them up in a ziplock plastic bag with Bisquick, takes about 1/2 box for one whole fish.
Fry a single layer at a time until they are a dark golden brown color.
The Bisquick absorbs the oil from the fish and you scrape off as much as you can after cooking.
