The neat thing about eating mountain oysters from pigs is it's easy to tell when their done. You fry them in a hot skillet in lard. You don't have to turn them because the nerve ends make them jump in the pan. When they quit jumping they are ready. Fact, no B.S. here. When I lived in Franklin Co the friday after Thanksgiving was hog killing day for the elderly and the youngster got nutted. First pig killed we cut the tenderloin out and the women would cook it in the oven and make biscuits. When the day was ending the oysters got cooked.
Those were good days
