Eating Sharks

The hammerhead has a really strong ammonia taste and is not good. The sandbar which is common and looks just like a dusky is very good. The dog sharks are alright, the female spiny is the best one. You can fillet or steak them, I cut the skin off.
I recommend marinating the meat not long in the frig in Italian salad dressing before cooking, Zesty Italian is a popular one here for marinating fish because that doesn't have any sugar in it.
Whatever you do, keep them covered in ice in the cooler.
