From the little I've read online, it sounds similar to bear meat. If you know how to prepare it, it can be tasty. Common thing seems to be to bleed the shark immediately and then a lemon juice soak overnight in the fridge to draw out the nasty stuff. I think I'll stick to what I know and release the toothy guys.
