90% of my fish get filleted, dipped in milk, rolled in A No. 1 Seasoned Flour and pan fried. Occasionally, I'll wrap some in foil with butter, onion, lemon, lemon pepper and salt for the grill. Also, I will sometimes broil at 400F for 20mins with bread crumbs, salt and pepper. Used to batter and deep fry, but got tired of that. I've never done the overnight soak in salt water and lemon. I might try that on some bluefish as they are low on my list of preferred fish for the table. Might be a good fish for me to try it on.
Headed for Avon on Sunday. Something tells me this is gonna be a long week, with anticipation and all.
