Thanks for the tip. I have tried blanching in the past and had poor luck. I have read that you want to freeze it before it gets completely ripe.
We'll see. I know cutting it off and freezing it works.
BTW, had scallops last night that were a year old and they were wonderfull.
Try this, chop up some bacon and cook. Remove bacon leave grease, pan fry scallops draining juice so they brown.Save the juice. Remove scallops and fry chopped up red pepper 2 cups of corn with salt,pepper, and lot's of garlic. Cook for about three minutes till you can smell the garlic. Add half cup of sour cream and stir in. Then put the bacon and scallops back in till warm. You be the judge if you need to add some of the juice back in from the scallops. Serve over your favorite pasta and top with Asagio cheese.
