What you have to do is shuck the corn and cut the end tip off. You have to wash it off for a final quick clean after it's shucked in hot water as hot as you can stand coming out the sink faucet, it's important the hotter the better. Dry them off, pack the ears in a single layer in gallon size plastic ziplock bags and stack the bags on top off each other in the freezer. I put up some Silver Queen from the Tarheel produce stand at Seagate Shopping Center recently, it doesn't matter what kind of corn as far as I know. I've left some too long with a lot fish in the freezer and it kind of picked up a fish flavor.
The corn crop has done really well in this part of the state, better than Virginia. We have been getting a lot of rain from thunderstorms. The produce stand has been selling out of corn on the weekends lately.
The peaches are in now, Food Lion has had some really good peaches.
