Years ago I was at a local farmers place for corn.
He took me to his field and helped me load up 2 bushels of corn, He even helped me pick them, and showed me his bushel size stopped when the corn no longer would stay on top.
2 bushels freshly picked for $2.00 per bushel...1970...
Took them home shucked them, boiled for 1 min a batch.
Immediately submerged in an ice bath (had a freezer full of ice) and froze in a dedicated freezer.
All in all 2 bushels of corn picked, blanched, and frozen within 4 hours.
We ate corn for the entire winter and it was every bit as good as when freshly picked.
I do my fish this way also, only freeze the entire fish in water..last's a long time...
