Yes you use them live. Don't keep them in water or they will drown , just keep them in a bucket or cup with some sand in the bottom.

I've always hooked them this way : run the hook through their head and out between their legs , turn it and put the point of the hook in the flipper on their stomach. The females have yellowish eggs that are under the flipper and fish will try to get those. If you have them hooked right , any fish that bites will hook itself most of the time.

Hope that makes sense , showing you would be a lot easier than trying to explain it.
