I'd also set a rod and rig out for sea mullet, they should be up close eating sand fleas. Look for areas with a lot of sand flea pieces and shells washed up on the beach at the high tide line.
Look for structure at low tide. Beach Reading - 101 that I posted had the right info on fishing the side of a shoal in a slough at a break in the outer bar, current from the north fish the north side of the hole or shoal and current from the south fish the south side of the hole or shoal. Fish on the south side this week. It works for everything.
For the sea mullet I'd use a regular double hook bottom rig with small size 5 Eagle Claw snelled hooks, size 4 if they are running big. Fishbites bloodworm or real, sand fleas if they are being picky.
The tackle shops might have some premade rigs. Sea Striker has a Spot/Kingfish Rig that works good for a variety of the smaller size fish. I like the one with the 1/2" ball floats.
