We pan sear just about everything with A little olive oil very little seasoning. Cobia,wahoo,king and spanish macks have all been great. I was suprised how well the bluefish we seared last sept tasted,they were great! As far as trout goes,fresh and salt water,try a alumnium foil tent with whole gutted scaled fish with lemon slices and some salt and pepper inside the fish and throw it on a charcoal grill.WOW! If you like it a little more spicy try a light breading with Zatarain's CrispySouthern style fish-fri. Good in the pan,and good in the fryer. Have not tasted pompano yet,but with the info on this websight I will this Sept. It's A mission. Good fishing,good cooking and good eating. God bless,Rodney
