Dude - How do you grill your cobia? I saw a recipe a while back about Bacon Wrapped Cobia and I'm dying to try it.
Tom - Some fish are better fried or grilled. Depends on the species. Fried my favorite would be fillets of big spot ( 3/4 to 1 lb. = big enough to fillet ) pompanos or croaker. Rockfish are good too but you have to know how to fillet and cook them right. Grilled I'd have to say my favorite is King Mackerel steaks. We use a fish basket for Spanish Mackerel sometimes too. Cobia is good too and trout. Salmon and freshwater trout are great.
You can't mess a fish recipe up bad enough to keep me from eating it !!!
I love to take leftover king steaks and shred them with a fork. I use them to make mackerel " Tuna " salad.
