both the tan and black are great. i fix them as follows:
split them in half
soak in salt water over night(if you can wait that long)
they do have some really tiny bugs in them sometimes
roll in flour, salt, pepper and some season all.
fry in good quality oil turning once.
also around here they usually come up when the redbud
trees bloom.
