? about shrimp bait

Been doing a lot of reading this winter and kept running across a familiar argument .... leave the head on or take the head off the shrimp ... depending on surf or sound . What's the general consensus ? I always just chucked the head ...never thinking . Also ...anybody ever hear of salt curing their squid strips prior to using ? Thanks
