I'll have to go through some of my old recipes and find you a good one. The trick is to use just a little of the dark malt extract to give it color , then use light or extra light to get the %ABV up to whatever style you're trying to make. How it's hopped makes a huge difference too. Some of the stouts require just an insane amount of hops , that can be scaled down to something more reasonable , or you can tinker with when you add the hops during the boil. Boiling hops for the full time is bittering hops , just the last five minutes or so is for the aroma.
What you'd be looking for in a store bought variety would be a "Bock" or "Doppelbock". They have more of a malt flavor , some are almost chocolatey. I love those , but they are heavy to drink , like eating a meal almost , so only one or two at a time then back to light beer. Look for a goat head on the label , and if you find some of the better ones they can go as high as 8-9% alcohol. Good wintertime beers , really , and some of them even taste a little better once the bottle has warmed up just a bit.
I'm right there with you about the sharks and rays. The older I get , the less I like messing with big biters , even though I'd probably still bleed a black tip for the table if he was legal.
Years ago , we used to debarb small rays to use shark fishing. The video below shows a guy from Wilmington fishing with them for Goliath Grouper in Boca Grande. Those Goliath Groupers are on my bucket list. Like a giant largemouth bass :):)
