I've ordered from Northern Brewer before , they did OK with shipping , and getting it out on time. The coriander is more of a personal preference. I personally don't care for it , but I know some who like it in wheat beer. You could get really close with (for your 2 gallon batch) a pound of light barley malt extract , a pound of wheat malt extract , 1/2 an ounce of Tettnang or Hallertau hops for the boil , 1/4 to 1/2 an ounce of the same for the last 5 minutes of the boil and the zest of one orange (probably half an orange for 2 gallons). Boil for an hour , then cool to room temperature before pitching yeast. Ale yeast would work , but the belgium would give it a better flavor. I've always had good luck with a rough version of that recipe.
Are you filtering your water? If you're on city water it will ruin the best beers. I run mine through a Pur faucet filter then add powdered gypsum to make it hard water , like they have in Germany. Helps with the brewing process , somehow , but that's more of the chemistry end that I never got too far into. I think it's like 1/2 to 1 teaspoons of powdered Gypsum for a whole batch.
