Cucumbers / Cilantro

Simple refrigerator pickles are great or for a side dish try turning them into Asian Cucumber Salad.

As for cilantro it tastes like soap to some people. If you can eat cilantro this salsa is really good.

This recipe came from Hurricane Mo's in Kitty Hawk and is the best salsa ever. Here is the original and my (half) version.

Hurricane Mo's Salsa

(2-28 oz.) -- 1 102 oz. can petite diced tomatoes (drained)
(1 cup) ----- 2 cups "finely" chopped white onion
(1/4 cup) --- 1/2 cup processed jarred jalapenos
(2 limes) --- juice of 4 fresh limes
(2 tsp) ----- 1 tbsp salt plus 1 teaspoon salt
(1 1/2 tsp) - 1 tbsp black pepper
(1 cup) ----- 2 cups fresh cilantro leaves (1 bundle for half)
(1 1/2 tsp) - 1 tbsp minced garlic
(for half) -- original makes a gallon

Process in food processor!! (don't over do it)
