Chicken Enchilada Casserole

I've got a great chicken chow mein recipe around here somewhere that came from a Korean lady at our military base in Germany back in the 1950s.

Here's something else somebody gave me a long time ago, I haven't seen this version of the recipe on the internet.

This is a favorite of mine that's easy to do been fixing it for over 20 years just changed the original from 1 to 2 bags of cheese it's much better.

Also a good one to impress the ladies with seems to be something popular exactly like it at the fancy restaurants, not called chicken casserole.

Chicken Enchilada Casserole

1 package of large flour tortillas
1 can Rotel tomatoes & chilies "drained"
1 can cream of mushroom soup
1 can cream of chicken soup
1 tsp chili powder
1 package of boneless chicken breasts
2 large 16 oz bags of shredded mild cheddar cheese
1 small sour cream

Roll chicken breasts up in wet paper towels and cook covered in a glass bowl in the microwave for 15 minutes or until done.

Shred chicken with a fork and mix in bowl with the soups, chili powder and Rotel tomatoes.

In a large deep baking dish start off by adding a little bit of the chicken mix in the bottom to keep it from sticking and then layer flour tortillas, chicken mix and cheese then again flour tortillas, chicken mix and cheese, divide the chicken mix in half to use also run each tortilla under water before placing in the dish and overlap them in the layers.

Bake uncovered at 350 degrees for 40 minutes, until the cheese looks done on the top.

Cut out squares with a metal spatula and serve with sour cream on top.
