Sauteed skate.
Roll wings in flour. Saute fillets in hot butter for 1 minute on each side. Add 2 tablespoons of sherry wine and bake in a pre-heated 450 degree oven uncovered for 6 - 8 minutes.
(To fillet, make a vertical cut just past the wing knuckle (inside of wing) until you hit the cartilege, then in a horizontal cut, slice against the cartilage toward the tip if the wing. Remove the fillet (so called:):) turn over wing and repeat.
