Fried skate:
Cut into "rib like" sections. Brush w/ a hint of Dijon mustard. Roll in flour. Dip in egg/milk mixture. Roll in Ritz breadcrumbs. Place in 350 degree deep fryer or very hot oil in a skillet. Cook about 2 minutes. drain on paper towel and serve w/ warm dipping sauces such as: BBQ, sweet and sour or tartar.
This is the last of the recipes you all wanted sooooooo badly. The recipes are now in the trash.
Hopefully the subject of eating skate is now finished for the year!!!
