I've heard those native brookies taste more like salmon. I don't think I could bring myself to keep a native trout from the Appalachian Streams. Every one I've caught in the last 10-15 years have been gently released. I might keep a few if I was fishing out west where they're a bit more plentiful. I remember catching native brookies up on the continental divide while in fly fishing Yellowstone park one after another all about 7" long. The bigger ones you really had to be stealthy and accurate with your casts. Those are skills I just don't have.
