The best spots on the pier are right behind the outer bar where the waves start to break and in the drop off right at the beach.
The best way for Gotchas is to take about 10-20 casts out near the end if nothing wait awhile and repeat, they tend to come and go.
The standard color is white with a red head but sometimes it's a certain color like gold or fluorescent green and usually spring.
It's unusual but sometimes the white with the green head does better than the red head. I guess it depends on what they are eating.
The most unusual I have seen was the bluefish only hitting the white with a blue head. I do not think you can find that one anymore.
They stopped making the gold one for awhile and brought it back. And make sure you have plenty the entire pierhouse wall will go quick.
I tie a short 12 inch piece of 30 pound mono for a leader but they will still bite the upper knot. You will catch more than with steel.
