Baked Skate:
Dip wings in melted butter, then Ritz cracker crumbs. Place on oven proof pan w/ 1 to 2 tablespoons of water. Bake in pre-heated 450 oven 10 minutes per inch of thickness. Meat can be removed from cartilage after cooking.
Now don't ask me why the water. Maybe so you don't have to throw away the pan afterward??:):)
