The ones they use for scallops are a different kind than the clearnose you will catch from the surf. I find the best way to cook them is to clean them, using the wings only. Bake them at 350 for an hour and then throw them out.I am speaking from expereance.People eat all kinds of things,but you have to draw a line somewhere.On the plus side they do fight like heck on light tackle.Catch and release a good idea.
