Me too with the pizza shops was Little Caesars and 2 mom and pop shops. I did evening shifts and did not have to make the dough.

I was kind of thinking about opening one at one time, it's a lot of work and a lot of competition out there so not so great idea.

What I hated the most was chopping an entire 50 pound bag of onions up in the mixer with no gas mask and was a first task at all.

Little Caesars green peppers came already chopped and frozen in plastic packs and why they taste different, the others used fresh.

Little Caesars original cheese chopper ratio was 2 blocks of mozzarella and 1 round of provolone, others were blocks of mozzarella.

Later the provolone was changed to muenster cheese at Little Caesars. I know the pizza sauce is marinara sauce same as dipping sauce.

At the time the pizza sauce came ready to go in large cans that had the Little Caesars label on it. Now mixing with the spices there.

They used 2 black metal baking dishes, one square other round. The square was for pan pizza would paint bottom and sides with olive oil.

The regular round had no olive oil just a little fine cornmeal in the bottom to keep it from sticking and that is how those were made up.

The dough ball was hand tossed into a roller machine then spread out by hand to pan edges, went over with fork to prevent dough bubbles.

This was set up like a salad bar with the toppings, cheese and sauce used a tall metal ring inside the round to keep it off the outer edge.

Not for the square pan pizza everything went to the edge also weighed all the toppings on a small kitchen scale and the mom and pops did not.

They used a high slide in oven, Little Caesars used a metal conveyor belt oven and sometimes would run hot when busy had to push them in more.

That's where some places are messing up. The crazy bread was another that had to be started further in for best results or would over cook it.

The sandwich bread would start halfway from a side door and was pizza dough folded over and cooked and Domino's still makes a more rounded one.

The crazy bread was pizza dough sliced in strips and spread apart a little in the pan then after cooked painted with melted butter and parmesan.

A how it's made below and ours was a big metal bowl mixer that could be converted into a chopper for the cheese and onions by changing out blades.

At the time it was usually sold as 2 pizzas on an open pizza box in a white paper sleeve with the logo and the reason for the pizza, pizza slogan.

Back then Pizza Hut had become #1 for best pizza. A side effect was the smell and I would not eat any pizza and I think it ended up being for years.
