Little late to the discussion but heres my 2 cents...
I really like the wilderness systems tarpons. Pretty pricy tho. Used to yak fish with a guy that had one. Those things really glide through the water. I could barely keep up with him.
I've also fished with a few guys that have pelicans and Ocean Kayak brands. Both good entry level kayaks. Guy with the Ocean kayak Malibu told me it was more stable and kept him dryer than his new kayak that cost more.
If you can, try before you buy. Lots of kayak manufactures overstate their maximum weight capacity (except Hobie). I bought a cobra explorer for the wife and tried it out myself. It was supposed to be able to carry something like 300 lbs and the thing would barely stay afloat with just me (225 lbs) in it without any gear.
Before you go go fishing, make sure you can get back into the thing if you flip.
Always check the wind direction and strength before you go out. The wind can really push a yak around.
