Rigging up right for northern beaches

I'm back for the week after many years away. What's the best way to rig up to get into those taylors from the beach? I have a 16' Hateras heaver rod, (too much) an 8' stiff bass rod and a lighter one with me... I have no tackle at all and twelve year old line. What lb test... what rigs... and lures? Am I cutting bait or throwin metal?
