I reside in the east Tennessee foothills where my parents grew up during the great depression. Their parents kept hogs as did two aunts and uncles on both sides of the family. To be honest with you I had never heard the word or term scrapple or souse until a few years ago.I do remember when I was about ten that my mom and dad processed a half of a hog on the kitchen table. Hams,bacon and sausage,that was it.Given the above information I ask my mom what they did with the pieces and parts of the left over pig; Daddy sold the scalded skin to the tanner in Bristol,the other stuff we put out.She was very serious about''putting the other stuff out'' People tend to think of cultural difference as some kind of country vs country but you know what,it's just across the mountain.
