souse is a little bit of everything. vinegar based jell with peppers, and other stuff. grandad used to use the head. he would scrape the ears until they were pure white. cook that stuff and use the broth and meat. we have a local slaughter house that still makes it. sells it at local grocery stores. cold beer, some crackers, yum yum!
