I always take that outer skin off. also avoid all the fat you can. the deer we take to eat are usually around the 60 t0 70 lb. dressed. if the weather is right I like to let hang at least a week. back in the day wasn't nothing to let them hang for 3 weeks. weather now not possible, to warm. I hope that big buck in Tenn. got to spread some of his genes around before that guy got him. I hunted a monster deer in west va. one year. saw him a few times, but to smart for me.
