Here's a deer meat recipe from my relatives that I have used for a long time. It takes out a lot of the gamey flavor.
Deer Meat
Thaw overnight in the refrigerator. Wipe clean with a damp cloth. If it has a strong skin trim that off.
Marinate overnight in the refrigerator using this mix.
Marinating Sauce:
1/2 cup canola oil
1/4 cup vinegar
1/4 cup chopped onion
1 tsp. salt
2 tsp. Worcestershire saucePut marinating sauce over deer meat and turn a couple of times during the marinating.
Cook in a roasting pan with the skin side up. Pour 1 package of Lipton onion soup (plain or beef soup) over meat with 1/2 cup of water. Salt and pepper meat. Cut 2 strips of bacon in quarters and put on top of meat. Cook uncovered.
After first hour - slice up 3 small or medium size onions and put on top and add 1/4 cup hot water.
The last 1/2 hour BBQ sauce can be put on the meat.
Cook at 325 degrees - 30 minutes to the pound. For 3 1/2 pound roast - cook 2 hours. Need to throw the onions and bacon away when done.
