Cooking Cauliflower

I had a bad year with the garden and the hot weather, it was the hottest July here on record and this last storm was the final blow to it. The best of the fishing for everything is usually the last 2 weeks of October and first week of November. Good water temps then, I prefer sea mullet, spot, blowtoads over croakers and the big croakers can be at random times for no reason.

My way of cooking yellow squash is sliced up in pan on top of the stove with a stick of butter and plenty of sliced onions with a teaspoon of sugar, medium heat for about 20 minutes until they are mushy and look done.

And here is my way for cauliflower .......

Fried Cauliflower

Take one head of cauliflower, wash and cut off florets by running knife around heart and cut into bite size pieces. Drop them in a pan on top of a whole stick of butter and has to be a whole stick so the bread crumbs will stick. Start on high cut back to medium, stir often, cook until milky clear about 15 to 20 minutes depending on the size of the head. Then add a 1/2 cup of Italian Bread Crumbs keep stirring and adding until covered good and cook 2 or 3 more minutes, do not add too much at one time think a little is a lot to keep extra bread crumbs out of the bottom of the pan. Progresso Italian Style Bread Crumbs in a blue canister is the best, can use their plain bread crumbs and add a lot of Italian Herb Seasoning use the kind in a spice jar.

Also is a good easy way to do chicken, take boneless chicken breasts and cut them up into bite size pieces and cook the same way, cut the biggest piece in the pan to make sure it is done.

If your traveling Virginia Diner used to have some good cauliflower batter fried in oil.
