I use turkey, better flavor. This batch I chopped an onion into the stockpot, then put the leg quarter, one wing, and the back in, cover with water. Cook just boiling for an hour lid on. Then let it sit for an hour. Remove turkey from pot and set aside to cool. Clean the broth of any skin but leave the onion. 2lb bag each corn and baby Lima beans. 2Tbl spoons each ground mustard, garlic, and pepper. I put half a small bottle of tobacco, I like it with a little bite, but it's not Chili. Shred the meat and add back in. Simmer at least an hour. Other people also add okra.
