Bluefish Crab Cakes

I freeze them with water in the bag and then soak in salted water with a squirt of lemon juice to try to remove more blood.
Maryland Style Bluefish Cakes
Poach 1 lb. of bluefish fillets. Let it cool in refrigerator over night. Lump it up, (mix it lightly) add a tbsp of Old Bay Seasoning, leave it in the refrigerator one more night. Now you're ready to make crab cakes without any crab meat.
1 lb. prepared bluefish
2 slices dried bread, crusts removed
1 tbsp mayonnaise
1 tbsp Worcestershire sauce
1 tbsp dried parsley flakes or 3 tbsp fresh parsley
1 tbsp baking powder
1/4 tsp salt
1 egg, beatenIn a large bowl, break bread into small pieces. Moisten with milk.
Add mayo, Worcestershire sauce, parsley, baking powder, salt, egg and prepared bluefish. Mix lightly and shape into patties. If time permits, refrigerate patties 30 minutes to help keep them together when cooking.
Broil or fry in a little butter until golden brown on both sides.
Double the ingredients for 2 lbs. of bluefish.
