Making Salsa

That is Tarheel and they did have a lot of nice looking tomatoes some of them were being attacked by the fruit flies.
I've got plenty of tomatoes from my garden just made a batch of Hurricane Mo's salsa out of all the ones piling up in the frig.
Here is the original and my (half) version.
Hurricane Mo's Salsa
(2-28 oz.) -- 1 102 oz. can petite diced tomatoes (drained)
(1 cup) ----- 2 cups "finely" chopped white onion
(1/4 cup) --- 1/2 cup processed jarred jalapenos
(2 limes) --- juice of 4 fresh limes
(2 tsp) ----- 1 tbsp salt plus 1 teaspoon salt
(1 1/2 tsp) - 1 tbsp black pepper
(1 cup) ----- 2 cups fresh cilantro leaves (1 bundle for half)
(1 1/2 tsp) - 1 tbsp minced garlic
(for half) -- original makes a gallonProcess in food processor!! (don't over do it)
