The 3/4 pounders are nice ones. Those small thin dollar store steak knives work great on the smaller fish much better than a fillet knife. I like to make boneless fish chips out of the spot, fillet them leaving the skin attached at tail and cut back from the tail under the skin cutting the skin off then the rib cage. Some people think they are better cooked with the bones and just cut the head off.
