A New Recipe to Try : Seafood Stuffed Tomatoes

Had this at a restaurant a month or two back , meant to post it for everyone here , but keep forgetting. It is absolutely delicious...

Seafood Stuffed Tomatoes

Whole tomatoes , uncooked , cored with 1/3 of the inside of tomato removed

Crab Imperial - Crab Meat cooked in a creamy sauce (see link below)

1 big scallop and 1 Jumbo shrimp per tomato.

White Cheddar , shredded.

Bacon , crumbled.

Put the cored tomatoes in a baking dish. Fill with 1/2 the crab imperial. Add 1 shrimp and 1 scallop to each tomato. Top with the remaining crab imperial. Cover the top with shredded white cheddar , then sprinkle with crumbled bacon.

Bake until cheese is melted , and tomatoes slightly soft. Serve with toasted sourdough. Good stuff :)
