I have handled over several thousand beavers in my life time. Don't knock until you try it. Skin beaver cut out ALL glands (veery inportant). Cut meat off the bone and cut into 1 inch cubes get your favorite sausage recipe cover according directions on packet( I like OLD PLantation sausage seasoning) let sit overnite in refrige and grind next day. Also good over an open spit like the settlers did, grind it up in hambergers. Try it it might be a shortage off bev's in N.C. YUM YUM!!!!!!!!!!!!!
