Old Christmas Breakfast

Sometimes I'll fix the pineapple casserole anytime. I have not seen anything out there like it and old used #2 size pineapple can.
Pineapple Casserole
1/2 cup sugar
3 Tbsp. all-purpose flour
3 eggs
1 20 oz can unsweetened crushed pineapple
4 slices white bread, cut into 1/2 inch cubes
1/2 cup melted butterIn a mixing bowl combine sugar, flour and eggs. Stir in pineapple along with its juice. Pour into a buttered ovenproof casserole, about 9 inches square. Top with the cubed bread and drizzle with melted butter. Bake at 350 degrees for 1 hour. Goes well with ham.

Sausage & Egg Casserole
1 lb. mild sausage "Jimmy Dean regular roll"
6 eggs
2 cups milk
1 cup shredded mild cheddar cheese
5 slices of toast
salt and pepper to tastePlace broken up toast in bottom of 9x13 dish. Fry sausage and drain. Place sausage on top of toast. Mix eggs, milk and cheese together. Pour over toast and sausage. Bake at 350 degrees for 30 to 40 minutes. Can be prepared the night before and refrigerated to cook the next morning.

Sausage Balls
1 lb. mild sausage "Jimmy Dean regular roll"
16 oz shredded "sharp" cheddar cheese to offset sausage
4 cups Bisquick mixWork together uncooked sausage and Bisquick mix, add cheese and mix well. Roll into balls. Bake on ungreased cookie sheet at 350 degrees for 15 to 20 minutes or longer depending on ball size, usually 20 minutes for medium size balls.
