My guess is collecting individuals DNAs for modifying a herd somewhere else, longhorns would be best choice for being environmentally adaptive.

Of course people are going missing too, might be something like the movie Stargate. This planet has been here a long time and why wait to grab.

It's been destroyed few times before, nothing was looking out for it and if it's space meat harvesters why not take all not pieces or butthole?
