cooking rays last night

Was watching Jacque Pepin cook all sorts of fish last night and he saves his favorite for last ...yep that's right - ray . Instead of fileting the wing he cut off the very end then sliced it into 4 lengthwise pieces ... this made taking the skin off real easy on both sides . Dredged it in flour and cooked it for 5 mins each side . Now the interesting part was when finished the filet is actually separated in half by a piece of cartledge , which after cooking just pulls off the meat . Pepin actually took a bite of it which he said was tasty ...yeah ok . Anyway the filets looked kinda like cod .
