Ribs. Sure you're just pullin the Capt's leg re: recipe. Do it simple. Cut into 1 or 2 rib pieces. Simmer for 3 hours in water on stove w/ "secret" spices etc. (No real secret, onions, garlic, and whatever else is layin around). Simmer takes out a lot of the fat and tenderizes. Put on grill turning frequently and basting w/ any store bought sauce mixed w/ a liitle soy sauce, and lots of brown sugar they get as crispy outside as you like.

Grill. Laugh of the day. Have a Char Broil "Infra Red" grill now and does a great job w/ no flare ups no matter what you throw on. Only one problem to date. One day wouldn't heat past 300 degrees. Instruction book no help. Manufacturer no help. After field stripping to a 3rd echelon level, and testing electric and gas parts, and installin new tank, and still not heating up past 300 degrees, smoked a few, cursed quite a bit, and did only thing left. Something not in instruction book or in conversation w/ manufacturer. Nylon screw driver handle + 10 hard knocks to pressure regulator. Voila!!!! Temp max back up to 725 degrees ever since.

Should anyone be interested in emulating the Capt's grill (as so many do his fishing techniques:):), the "Infra Red" grill is sold in 2 types. 1 at Lowes, 1 at Home Depot. They are identical in function but for the cooking grates. Do not recommend the Lowes version even tho it has stainless steel grates. Grates are a honeycomb of tiny holes that load up after 2 uses and smoke to high heaven (and is a fire hazard.) Instruction book says clean w/ tooth pick. W/ about 5000 holes - well you can imagine the cleaning after each use.) The Home Depot version has porcelin grates w/ 3/8" btw grid slats. Clean grates 2x a year by soaking in ammonia for 2 days. Baked on residue comes off easily w/ plastic putty knife.

Saving stuck on the roof story, from last week, for a winter doldrum laugher.
