had some fresh tenderloin last evening. the weather has been about normal this season. been able to hang deer for longer time. if weather is right, i like to hang them for at least a week. makes meat much better. family been asking about jerky and bolonga. time to get out the smoker and grinder and get to work. deer are fat and plentiful this year. roll tenderloin in bread flour, fry in olive oil. smother with sweet onion. some fresh collards, and baked potato. yum! yum! good luck to all you hunters. if you have the time, try to get one for the food bank in your area.
