Ahem,,,, no fish goes to the Capt's table unless straight from ocean to cleaning table. Never said there was an ammonia taste.
Notice in the pic the ridges running end to end. Those are the "hemp rope" in disguise. Cook em off the cartiledge and see what happens.
Do you think taking a cookie cutter to punch out raw circles could in any way duplicate color or texture of a scallop once its cooked??
Fess up, Almighty Ruler of all thats Kitty Hawk - have you prepared and eaten one??

(And....monk fish no matter how prepared is NOT poor mans lobster:):) Maybe its better presented as "Poor the man who eats monk fish - expecting lobster":):)
