Welcome back senator, I had noticed you were posting on the Sandbridge pier board awhile a go. I like to see what's headed this way in the fall.
Would be either steaked or filleted, filleting is easier for me to get the skin off. Leave the meat attached at the tail and run the knife back under the skin then cut off what you missed and cut the fillet up into small pieces, cooks better. Soak in salt water then a quick marinade like Zesty Italian dressing to get rid of any sharky taste. Zatarain's breading would be a good choice for fried or if you want fish and chips style do beer battered.
Looks like some gator size specs might be around up that way....
