Another old one, this recipe came from my great Aunt Erma that lived in the Florida Keys. I've been eating it at least once a month since I was a kid.
Macaroni & Cheese
1 - 8 oz. box of elbow macaroni
8 to 12 ozs. pre-shredded mild chedder cheese
3/4 stick margarine
1 - 14.5 oz. can diced tomatoes (with juice)
salt and pepper to taste
1/4 to 1/2 cup milkBoil about 3 qts. of water in a large pot, add some salt, then add macaroni. Bring to a boil. Boil for about 7 to 8 minutes. Drain macaroni. Add and mix - cheese first, butter, diced tomatoes, salt, pepper, about a 1/2 cup milk for oven or 1/4 cup milk for microwave. Not enough milk will make it dry and too much milk will be soupy.
Put in a 2 qt. covered baking dish and bake in the oven at 350 degrees for 30 minutes. (or: microwave - 15 minutes in a covered dish, then halfway stir well getting around the sides to keep it from sticking.)
Mild chedder is the best to use, sharp chedder or different leftover cheeses can be used and it's also good with a little parmesan cheese.
