The dog sharks are edible and there's no regulations on them. The spiny dog shark is better than the smooth dog shark. I'd fillet them and leave the skin attached at the tail then run the knife between the skin and meat from the tail, go back and trim the pieces of skin off that you miss with the knife. I'd soak the fillets in salt water to get the blood out and lemon juice to help prevent the sharky taste. I'd also cut the fillets up into small pieces or 2 inch strips so they fry up better.
I haven't tried a thresher shark, you can keep it if it's not a bigeye thresher and is 54 inches fork length from the tip of the nose to the middle of the fork in the tail. That shark was probably a keeper, about 4' main body, 6' tail, 18" jaws.
The fake scallops were skate wings cut with a cookie cutter and the restaurants can't do that anymore because they have to say what it is. I wouldn't mess with the skates. If you cut yourself on those sharp little horns all over their back it can take a long time to heal.
