When I take my son we fish for whatever is biting. Kids will get tired of fishing if it turns into an hour of staring at a rod with no bites. You can probably expect to see spot , croaker and mullet - all 3 are pretty common

I would recommend bloodworms or shrimp to start , and then you can cut a small fish up for cut bait after you catch one. Just about any fish will bite those baits , you'll just have to find out what's working best on the days you fish. You could also have the kids catch sand fleas and use those for bait.

I'd use the heaviest line your rods/reels will handle. Most can handle 12-15 lb. with no problem. I recommend a shock leader of at least 30 lb. test when using smaller line. You'll be using 2-3 ounce sinkers and they will break the smaller line when you cast , especially with kids casting.
